- Process the walnuts in a food processor until they resemble coarse sand, about 15 seconds. Transfer to a bowl and set aside.
- In the food processor, finely grind the remaining walnuts for another 15 seconds. Add Medjool dates, pumpkin puree, cocoa powder, sea salt, and vanilla extract. Blend until smooth, approximately 30 seconds.
- Roll the mixture into 8 uniform-sized balls.
- Coat each ball in the reserved ground walnuts.
- Serve immediately or chill in the refrigerator for at least 30 minutes.
