For the Dressing
  • 1/3 cup Peanut Butter smooth or crunchy
  • 2 tablespoons Soy Sauce gluten-free if necessary
  • 1 tablespoon Sesame Oil optional
  • 1 tablespoon Maple Syrup or honey (not vegan)
  • 2 tablespoons Rice Vinegar or lemon/lime juice
  • 1 clove Garlic minced

Preparation Steps
  1. Wash cucumbers thoroughly and slice them into thin strips, then place them in a large mixing bowl.
  2. Chop fresh parsley and finely dice fresh chilies, adding them along with toasted sesame seeds into the bowl.
  3. In a separate bowl, whisk together smooth peanut butter, soy sauce, sesame oil, rice vinegar, maple syrup, and minced garlic until smooth.
  4. Pour the peanut butter dressing over the cucumber mixture and toss gently until well-coated.
  5. Transfer to a serving bowl and garnish with extra sesame seeds or parsley before serving.
