Step-by-Step Instructions
  1. In a medium bowl, whisk together the minced garlic, lime juice, orange juice, ground cumin, dried oregano, salt, and black pepper until smooth.
  2. Peel plantains and cut diagonally into ½-inch thick slices.
  3. Toss the sliced plantains in the mojo marinade and allow to marinate for about 10 minutes.
  4. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange the marinated plantains in a single layer.
  5. Roast for 20-25 minutes, turning halfway through, until edges are golden brown and crisp.
  6. Serve garnished with fresh cilantro and lime wedge.
