For the Salad
  • 2 cups grated carrots peeled and grated
  • 2 medium apples Granny Smith or Honeycrisp
  • 2 cups shredded red cabbage finely shredded
  • 1 cup raisins or dried cranberries
  • 1/2 cup toasted walnuts or pecans
  • 1/4 cup fresh parsley chopped
For the Dressing
  • 1 cup plain Greek yogurt can substitute low-fat
  • 1/4 cup mayonnaise
  • 1/4 cup fresh orange juice
  • 2 tablespoons lemon juice
  • 2 tablespoons honey adjust for sweetness
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Preparation
  1. Peel and grate carrots, and place in a mixing bowl.
  2. Core and dice apples, and add to the bowl.
  3. Finely shred red cabbage and add to the bowl with raisins and nuts.
  4. In a separate bowl, whisk together yogurt, mayonnaise, orange juice, and lemon juice.
  5. Mix in honey, salt, and pepper into the dressing.
  6. Pour dressing over salad and toss gently to combine.
  7. Taste and adjust seasoning as needed.
  8. Refrigerate for 15 minutes to allow flavors to meld.
  9. Garnish with extra nuts or parsley before serving.
