Step-by-Step Instructions
  1. Place boneless, skinless chicken in the bottom of your crockpot, evenly spread out for even cooking. Set to low heat.
  2. In a mixing bowl, combine pineapple chunks, soy sauce, brown sugar, and minced garlic. Stir well and pour over the chicken.
  3. Cover the crockpot and cook on low for 4 to 6 hours or high for 2 to 3 hours, until chicken is tender.
  4. Remove chicken and mix cornstarch with water in a small bowl. Heat in a saucepan until thickened, then return chicken.
  5. Shred the chicken and mix with the thickened sauce in the crockpot. Serve hot over rice or with a fresh salad.
