- Boil potatoes by placing whole Russet potatoes in a pot of water with salt. Cook for 15–20 minutes until fork-tender.
- Cool the potatoes for at least 10 minutes and smash each one to about 1 inch thick.
- Heat a cast iron skillet over medium heat with olive oil and butter until the butter froths.
- Arrange the smashed potatoes in the skillet, season with salt, and cook undisturbed for 5–7 minutes.
- Flip each smashed potato gently and cook for another 5–7 minutes until the second side is golden brown.
- Prepare garlic herb butter by melting remaining butter with minced garlic and fresh herbs over low heat for 2–3 minutes.
- Serve the crispy hash browns drizzled generously with garlic herb butter and enjoy!
