Step-by-Step Instructions
  1. Boil potatoes by placing whole Russet potatoes in a pot of water with salt. Cook for 15–20 minutes until fork-tender.
  2. Cool the potatoes for at least 10 minutes and smash each one to about 1 inch thick.
  3. Heat a cast iron skillet over medium heat with olive oil and butter until the butter froths.
  4. Arrange the smashed potatoes in the skillet, season with salt, and cook undisturbed for 5–7 minutes.
  5. Flip each smashed potato gently and cook for another 5–7 minutes until the second side is golden brown.
  6. Prepare garlic herb butter by melting remaining butter with minced garlic and fresh herbs over low heat for 2–3 minutes.
