For the Frosting
  • 1 cup Cottage Cheese high-fat brands like Good Culture or Daisy
  • 1/2 cup Peanut Butter no-added-sugar variety
  • 2 tablespoons Sweetener low-carb granular or liquid stevia
  • a few drops Liquid Stevia Vanilla Drops or more sweetener if needed
For the Topping
  • 1/2 cup Frozen Berries optional, use any low-carb fruit

Instructions
  1. Blend 1 cup of high-fat cottage cheese in a food processor on high for about 30 seconds until smooth and creamy.
  2. Add 1/2 cup of no-added-sugar peanut butter, 2 tablespoons of sweetener, and a few drops of liquid stevia vanilla to the blended cottage cheese. Blend again for another 30 seconds until thick and creamy.
  3. Taste the mixture and adjust sweetness if needed. Spoon into small bowls or containers for serving, enjoying immediately or refrigerating for 15-30 minutes.
  4. For the berry sauce, blend 1/2 cup of frozen berries with a tablespoon of sweetener until smooth or simmer on the stovetop for about 5-7 minutes.
