- Blend 1 cup of high-fat cottage cheese in a food processor on high for about 30 seconds until smooth and creamy.
- Add 1/2 cup of no-added-sugar peanut butter, 2 tablespoons of sweetener, and a few drops of liquid stevia vanilla to the blended cottage cheese. Blend again for another 30 seconds until thick and creamy.
- Taste the mixture and adjust sweetness if needed. Spoon into small bowls or containers for serving, enjoying immediately or refrigerating for 15-30 minutes.
- For the berry sauce, blend 1/2 cup of frozen berries with a tablespoon of sweetener until smooth or simmer on the stovetop for about 5-7 minutes.
