Ingredients

For the Cabbage
  • 1 medium head green cabbage about 2 lbs, keep wedges for better browning and presentation
  • 2 tablespoons unsalted butter adds richness to the sauce; substitute with olive oil for a dairy-free option
  • 1 tablespoon olive oil enhances flavor for frying; feel free to use any other high-heat oil
For the Sauce
  • 1 small yellow onion finely chopped; substitute with shallots for a milder flavor
  • 4 cloves garlic minced, delivers bold flavor
  • 0.5 cup heavy cream for a lighter version, use half-and-half or coconut cream
  • 0.5 cup freshly grated Parmesan cheese avoid pre-shredded for the best melting quality
  • 1 teaspoon Cajun seasoning adds depth and a hint of heat; create your own mix or omit
  • Salt to taste
  • Freshly ground black pepper to taste
For the Garnish
  • 1 tablespoon chopped fresh parsley plus more for garnish; brightens the dish

Equipment

  • Skillet

Method

Instructions
  1. In a large skillet, melt 2 tablespoons of unsalted butter with 1 tablespoon of olive oil over medium-high heat. Allow the butter to bubble for about 1-2 minutes.
  2. Carefully place wedges of cabbage in the pan, searing for 3-4 minutes on each side until golden-brown.
  3. Add the finely chopped yellow onion and cook for about 5 minutes, stirring until soft and golden.
  4. Stir in 4 minced garlic cloves and 1 teaspoon of Cajun seasoning, sautéing for about 1 minute until fragrant.
  5. Pour in ½ cup of heavy cream, scraping the pan to deglaze and letting it simmer for 2-3 minutes.
  6. Add ½ cup of freshly grated Parmesan cheese and 1 tablespoon of chopped fresh parsley, stirring until smooth.
  7. Return the seared cabbage wedges to the skillet, spooning sauce over them, and cook for an additional 5 minutes on low heat.
  8. Remove from heat and garnish with extra chopped parsley before serving warm.
