- In a mixing bowl, combine equal parts of room temperature unsalted butter and honey until smooth and creamy. Set aside for spreading on bread.
- Arrange slices of your favorite sandwich bread on a cooling rack over a baking sheet. Spread the honey butter evenly on each slice.
- Using a tube of mayonnaise, draw a border around the edges of each slice of bread to hold the egg.
- Carefully crack one large room temperature egg onto each slice of bread. Season with salt and black pepper.
- Distribute pancetta or bacon bits evenly over the eggs and borders.
- Sprinkle shredded Parmigiano cheese over the tops of the eggs and pancetta.
- Place in a cold oven set to high broil at 550°F. Cook for 4-5 minutes until eggs are set and cheese is bubbling.
- Remove from oven, optionally sprinkle more Parmigiano cheese, and let sit for 2-3 minutes before serving.
