Ingredients
  

For the Honey Butter
  • 1/2 cup Unsalted Butter room temperature; substitute with regular butter if preferred
  • 2 tbsp Honey can be omitted if not desired
For the Toast Base
  • 4 slices Sandwich Bread any preferred type like sourdough or whole grain
For the Egg Mixture
  • 1 tube Mayonnaise thick mayonnaise can also work
  • 4 large Eggs use room temperature for best results
  • to taste Salt
  • to taste Black Pepper
For the Toppings
  • 1/4 cup Pancetta or Bacon Bits can be cooked or uncooked based on preference
  • to taste Shredded Parmigiano Cheese adjust for personal taste

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine equal parts of room temperature unsalted butter and honey until smooth and creamy. Set aside for spreading on bread.
  2. Arrange slices of your favorite sandwich bread on a cooling rack over a baking sheet. Spread the honey butter evenly on each slice.
  3. Using a tube of mayonnaise, draw a border around the edges of each slice of bread to hold the egg.
  4. Carefully crack one large room temperature egg onto each slice of bread. Season with salt and black pepper.
  5. Distribute pancetta or bacon bits evenly over the eggs and borders.
  6. Sprinkle shredded Parmigiano cheese over the tops of the eggs and pancetta.
  7. Place in a cold oven set to high broil at 550°F. Cook for 4-5 minutes until eggs are set and cheese is bubbling.
  8. Remove from oven, optionally sprinkle more Parmigiano cheese, and let sit for 2-3 minutes before serving.
