  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice 2 ½ cups of butternut squash into ½ inch cubes.

  4. Roast in the oven for 30-35 minutes until tender and golden brown.
  5. Boil salted water and cook 10 oz pasta until al dente, reserving ½ cup of pasta water.
  6. Blend roasted vegetables with reserved pasta water until smooth.
