Method
 

Instructions
  1. Preheat your oven to 350ºF (175ºC) and line a loaf pan with parchment paper, coating with nonstick spray.
  2. In a small bowl, mix 1/2 cup brown sugar with 1 tsp cinnamon for the cinnamon-sugar mixture.
  3. Toss chopped Granny Smith apples with 2 tbsp sugar and 1 tsp cinnamon in a medium bowl.
  4. Cream together 1/2 cup softened butter and 2/3 cup granulated sugar until light and fluffy; mix in eggs and vanilla.
  5. In a separate bowl, whisk together 1.5 cups flour, 2 tsp baking powder, and 1/2 tsp salt.
  6. Gradually incorporate the dry mix into the wet ingredients, then stir in 1/2 cup milk until just combined.
  7. Pour half of the batter into the loaf pan, then layer with half the apples and half the cinnamon-sugar mix.
  8. Top with the remaining batter, apples, and cinnamon-sugar mix.
  9. Bake for about 1 hour, until a toothpick comes out clean.
  10. Cool for 15 minutes, then remove from the pan.
  11. Whisk together 1 cup powdered sugar and 3 tbsp milk for the glaze, then drizzle over the cooled bread.
  12. Slice and serve warm or at room temperature.
