Step-by-Step Instructions
  1. In a large mixing bowl, combine warm water and instant yeast, letting it sit for about 5 minutes until it bubbles.
  2. Gradually add bread flour and fine sea salt, mixing until no dry flour remains.
  3. Transfer the dough to a greased bowl and cover. Allow it to rise until doubled in size, roughly 1-2 hours.
  4. Prepare your 9x13-inch baking pan with olive oil and melted unsalted butter.
  5. Once risen, punch the dough down and stretch it to fill the pan evenly.
  6. Mix brown sugar and ground cinnamon, then spread over half of the stretched dough. Fold over to seal in filling.
  7. Cover and let it rise in a warm area until tall and bubbly, about 1-2 hours.
  8. Preheat the oven to 400°F (200°C) and bake for 18-22 minutes until golden brown.
  9. Allow the focaccia to cool for about 10 minutes, then drizzle with icing and slice.
