Step-by-Step Instructions for Easter Monster Cookies
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Crush the chocolate mini eggs in a zip-lock bag and set aside some larger pieces for decoration.
  3. In a large mixing bowl, cream together the room-temperature salted butter, white sugar, and brown sugar until light and fluffy.
  4. Mix in the smooth peanut butter until fully combined.
  5. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
