Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to boil. Add pasta and cook according to package instructions, usually about 8-10 minutes. Drain and set aside.
  2. In a large pot over medium-high heat, cook ground beef for 5-7 minutes until browned. Drain excess fat.
  3. Stir in taco seasoning and diced tomatoes. Add cream cheese and milk or beef broth, mixing until combined and creamy, about 3-4 minutes.
  4. Fold in the drained pasta and stir gently for 2-3 minutes over low heat until heated through.
  5. Sprinkle shredded cheese on top, cover for 2 minutes to melt cheese, then serve hot.
