  • 1 cup milk whole, 1%, or 2% milk for optimal taste
  • 1/4 cup butter softened, salted or unsalted
  • 1 large egg
  • 1 cup sourdough starter active starter at peak
  • 1 tablespoon sugar helps activate the yeast
  • 1 teaspoon salt essential for flavor
For the Filling
  • 1 cup cheddar cheese avoid pre-grated for better melt
  • 2 cloves garlic optional, minced
  • 1/4 cup fresh herbs parsley, dill, or your choice

Method
 

Dough Preparation
  1. In a large mixing bowl, combine milk, softened butter, egg, sourdough starter, sugar, and salt. Mix on medium speed for about 5-7 minutes until a smooth and elastic dough forms.
  2. Cover the bowl and let it rest at room temperature for about 30 minutes.
  3. Perform a series of stretch and folds after 30 minutes, then cover and let it rest for another 30 minutes.
  4. Cover tightly and let the dough rise at room temperature until it doubles in size, about 8-10 hours.
Filling and Shaping
  1. Roll out the dough into a rectangular shape, approximately 1/4 inch thick.
  2. Mix softened butter with minced garlic and spread evenly over the dough. Sprinkle cheddar cheese and fresh herbs on top.
  3. Tightly roll the dough into a log shape and slice into 8 equal pieces.
  4. Place the sliced rolls into a greased baking dish, cover, and let them rise for about 2 hours.
Baking
  1. Preheat the oven to 375°F (190°C). Bake the rolls for 20-25 minutes until golden brown.
  2. Let cool in the baking dish for 10 minutes before transferring to a wire rack.
