Method
 

Directions
  1. In a small bowl, mix together 1 ½ tablespoons of unsalted butter and 1 ½ tablespoons of honey until creamy and well-combined. Set aside.
  2. Arrange 4 slices of your chosen sandwich bread on a cooling rack over a baking sheet. Spread the honey butter mixture on the tops of each slice and broil at 550°F until golden and crispy.
  3. Once the toast is broiled, create a wall around the edge of each bread slice with mayonnaise to contain the egg.
  4. Crack a large egg onto each slice, season with salt and pepper, ensuring you do not break the yolk.
  5. Top each egg with pancakes and sprinkle with shredded Parmigiano.
  6. Return to the broiler for 4-5 minutes until bubbly and golden. Let them sit for an additional 2-3 minutes after broiling.
  7. Sprinkle with additional cheese if desired and serve immediately.
