  • 2 cups cucumber sliced into rounds
  • 1 cup imitation crab meat gently broken into pieces
  • 1 cup avocado diced
  • ¼ cup green onions chopped
For the Dressing
  • 2 tablespoons rice vinegar can substitute with apple cider vinegar
  • 1 tablespoon soy sauce use gluten-free version if needed
  • 1 teaspoon sesame oil potent flavor
  • 1 teaspoon sugar can substitute with honey
  • to taste salt
  • to taste pepper
For the Garnish
  • 2 tablespoons sesame seeds toasted for extra flavor

Method
 

Preparation Steps
  1. Wash the cucumber thoroughly and slice it into thin rounds.
  2. Dice the avocado and add it to the bowl with the cucumber.
  3. Chop the green onions and add them to the cucumber and avocado mixture.
  4. Add imitation crab meat to the bowl and gently mix to combine.
  5. Prepare the dressing by whisking together rice vinegar, soy sauce, sesame oil, sugar, salt, and pepper.
  6. Pour the dressing over the salad mixture and toss to coat evenly.
  7. Cover the salad and chill in the refrigerator for at least 15 minutes.
  8. Before serving, sprinkle with toasted sesame seeds and gently toss.
