Method
 

Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 13x9 inch baking pan with butter or non-stick spray.
  3. In a large mixing bowl, combine cream cheese and granulated sugar. Beat until smooth and fluffy, about 3-5 minutes.
  4. Add eggs one at a time, beating well after each addition until the mixture is smooth and glossy.
  5. Gradually mix in sweet rice flour and baking powder until just combined. Do not overmix.
  6. Gently fold in melted butter, vanilla extract, cream of coconut, milk, and crushed pineapple until just mixed.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Sprinkle a mixture of brown sugar and granulated sugar on top of the batter.
  9. Bake for about 1 hour, or until a toothpick inserted in the center comes out clean.
  10. Allow the cake to cool in the pan for at least 15-20 minutes.
  11. Cut into squares and serve warm.
