Marination and Cooking
- In a baking dish, whisk together olive oil, balsamic vinegar, chopped rosemary, winter savory, sage, minced garlic (if using), kosher salt, and freshly ground pepper. Place the chicken thighs in the marinade, ensuring they’re fully coated. Cover the dish with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, or up to overnight for maximum flavor infusion.
- While the chicken marinates, preheat your oven to 350°F (175°C). Prepare a baking sheet lined with parchment paper or lightly greased for easy cleanup.
- Once marinated, remove the chicken thighs from the refrigerator and arrange them on the prepared baking sheet. Bake in the preheated oven for 25-35 minutes, or until the internal temperature reaches 165°F (74°C) when checked with a meat thermometer. Turn the chicken halfway through cooking for even browning and a consistent texture.
- After baking, remove the Balsamic Herb Baked Chicken Thighs from the oven and allow them to rest for about 5 minutes. Serve warm, optionally garnished with lemon wedges.
