Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the dry ingredients: flour, sugar, baking powder, baking soda, salt, and nutmeg for about 1-2 minutes.
  3. In a separate bowl, whisk wet ingredients: Greek yogurt, milk, eggs, sourdough discard, melted butter, and vanilla until smooth (2-3 minutes).
  4. Combine wet and dry mixtures: pour wet into dry and mix on low speed until just combined, avoiding overmixing.
  5. Grease donut pans with coconut oil or cooking spray. Fill each cavity 3/4 full with batter.
  6. Bake in the preheated oven for 14-16 minutes, or until edges are golden brown and a toothpick comes out clean.
  7. Cool the donuts in the pan for 5 minutes before transferring them to a wire rack.
  8. In a zip-top bag, add powdered sugar. Once cooled, shake the donuts in the bag until evenly coated.
