- Preheat your oven to 400°F (200°C).
- In a medium bowl, mix together apricot preserves, grainy mustard, Dijon mustard, low sodium soy sauce, lime juice, grated ginger, and garlic until thoroughly combined.
- Place salmon fillets skin-side down in a greased baking dish and coat each with the prepared glaze.
- Bake for about 10 minutes until the salmon flakes easily with a fork.
- Optional: Marinate the salmon in the glaze mixture for at least 30 minutes prior to baking for deeper flavor.
- Remove from oven and serve hot, drizzled with remaining glaze.
