Ingredients

  • ½ cup vegetable oil

  • 1 cup chopped pecans
  • 1 cup caramel sauce (store-bought or homemade)
  • 1 cup chocolate chips
  • 1 cup unsalted butter, softened (for frosting)
  • 3 ½ cups powdered sugar (for frosting)
  • ½ cup cocoa powder (for frosting)
  • ¼ cup heavy cream (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until well combined.
  4. Stir in the boiling water until the batter is smooth (the batter will be thin).
  5. Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and transfer to wire racks to cool completely.
  7. Once the cakes are cool, place one layer on a serving plate. Drizzle half of the caramel sauce over the top, then sprinkle with half of the chopped pecans and half of the chocolate chips.
  8. Place the second cake layer on top and repeat the process with the remaining caramel sauce, pecans, and chocolate chips.
  9. For the frosting, beat the softened butter in a mixing bowl until creamy. Gradually add the powdered sugar and cocoa powder, mixing until combined. Add the heavy cream and vanilla extract, and beat until the frosting is light and fluffy.
  10. Frost the top and sides of the cake with the chocolate frosting.
  11. Serve immediately or refrigerate until ready to serve.
