- 1 cup canned pumpkin puree
- 1 cup sliced mushrooms (cremini or button)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme

- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (plus extra for serving)
- 1/4 cup vegetable broth (or pasta cooking water)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/4 cup of the pasta cooking water, then drain the spaghetti and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for about 5 minutes, or until they are browned and tender.
- Add the minced garlic, dried thyme, and dried sage to the skillet. Sauté for an additional 1-2 minutes until fragrant.
- Stir in the pumpkin puree, vegetable broth (or reserved pasta water), salt, and black pepper. Cook for about 3-4 minutes, stirring frequently, until the mixture is heated through and well combined.
- Add the cooked spaghetti to the skillet and toss to coat the pasta evenly with the pumpkin and mushroom sauce. If the sauce is too thick, add a little more broth or pasta water to reach the desired consistency.
- Remove from heat and stir in the grated Parmesan cheese until melted and creamy.
- Serve immediately, garnished with chopped fresh parsley and additional Parmesan cheese if desired.
