  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/4 cup of the pasta cooking water, then drain the spaghetti and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for about 5 minutes, or until they are browned and tender.
  3. Add the minced garlic, dried thyme, and dried sage to the skillet. Sauté for an additional 1-2 minutes until fragrant.
  4. Stir in the pumpkin puree, vegetable broth (or reserved pasta water), salt, and black pepper. Cook for about 3-4 minutes, stirring frequently, until the mixture is heated through and well combined.
  5. Add the cooked spaghetti to the skillet and toss to coat the pasta evenly with the pumpkin and mushroom sauce. If the sauce is too thick, add a little more broth or pasta water to reach the desired consistency.
  6. Remove from heat and stir in the grated Parmesan cheese until melted and creamy.
  7. Serve immediately, garnished with chopped fresh parsley and additional Parmesan cheese if desired.
