Ingredients

  • 2 to 3 pounds beef chuck roast
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons fresh ginger, grated
  • 2 teaspoons allspice
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup beef broth
  • 1 cup coconut milk
  • 2 large carrots, chopped
  • 2 large potatoes, diced
  • 1 bell pepper, chopped
  • 2 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a large Dutch oven, heat the vegetable oil over medium-high heat. Season the beef chuck roast with salt and pepper, then sear it in the hot oil for about 4-5 minutes on each side until browned. Remove the roast and set it aside.
  3. In the same pot, add the chopped onion, garlic, and ginger. Sauté for about 3-4 minutes until the onion is translucent.
  4. Stir in the allspice, thyme, paprika, and black pepper, cooking for another minute until fragrant.
  5. Return the roast to the pot and add the beef broth, coconut milk, soy sauce, and brown sugar. Bring the mixture to a simmer.
  6. Add the carrots, potatoes, and bell pepper to the pot, ensuring they are submerged in the liquid.
  7. Cover the pot with a lid and transfer it to the preheated oven. Cook for 3 to 4 hours, or until the meat is tender and easily pulls apart with a fork.
  8. Once done, remove the pot from the oven and let it rest for 10 minutes before slicing. Garnish with sliced green onions before serving.

Notes

  • For added heat, include 1-2 chopped Scotch bonnet peppers during cooking.
  • Substitute the beef chuck roast with a pork shoulder for a different flavor profile.
