- 2 pounds boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Sear the chicken in the skillet for about 5 minutes on each side until golden brown. Remove from heat.
- In a baking dish, spread the salsa evenly on the bottom. Place the seared chicken on top of the salsa.
- In a bowl, mix the shredded cheddar and Monterey Jack cheese together. Sprinkle the cheese mixture over the chicken.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
- Remove from the oven and let it cool for 5 minutes. Drizzle sour cream over the top and garnish with fresh cilantro if desired.
Notes
- For a spicier kick, add diced jalapeños to the salsa before baking.
- You can also substitute the chicken with cooked shredded beef or pork for a different flavor profile.
