Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Sear the chicken in the skillet for about 5 minutes on each side until golden brown. Remove from heat.
  4. In a baking dish, spread the salsa evenly on the bottom. Place the seared chicken on top of the salsa.
  5. In a bowl, mix the shredded cheddar and Monterey Jack cheese together. Sprinkle the cheese mixture over the chicken.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
  7. Remove from the oven and let it cool for 5 minutes. Drizzle sour cream over the top and garnish with fresh cilantro if desired.

  • For a spicier kick, add diced jalapeños to the salsa before baking.
