Description
A delicious twist on traditional mac and cheese, these gooey quesadillas are filled with creamy macaroni and cheese, making for a perfect comfort food.

- 2 cups cooked macaroni pasta
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup milk
- 1/4 cup cream cheese, softened
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large flour tortillas
- 2 tablespoons butter
Instructions
- In a large mixing bowl, combine the cooked macaroni, cheddar cheese, mozzarella cheese, milk, cream cheese, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are combined and the cheeses are melted and gooey.
- Heat a large skillet over medium heat and add 1 tablespoon of butter.
- Place one tortilla in the skillet and spread half of the mac and cheese mixture evenly over the tortilla.
- Top with another tortilla and cook for about 3-4 minutes, or until the bottom tortilla is golden brown.
- Carefully flip the quesadilla using a large spatula and add the remaining tablespoon of butter to the skillet. Cook for another 3-4 minutes until the second side is golden brown and the cheese is melted.
- Remove from the skillet and let it cool for a minute before slicing into wedges. Repeat with the remaining tortillas and mac and cheese mixture.
- Serve warm with your favorite dipping sauces, such as salsa or sour cream.
Notes
- For a spicy kick, add diced jalapeños or crushed red pepper flakes to the mac and cheese mixture.
- Try using different types of cheese, such as pepper jack or gouda, for a unique flavor twist.
