- 1 cup fresh blueberries
- 1 tablespoon honey (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the cottage cheese and eggs. Use a hand mixer or whisk to blend until smooth and creamy.
- Add the almond flour, coconut flour, baking powder, salt, and vanilla extract to the mixture. Mix until well combined.
- Gently fold in the fresh blueberries and honey, if using, until evenly distributed.
- Spoon the batter onto the prepared baking sheet, forming 6-8 mounds.
- Bake in the preheated oven for 25-30 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Allow the cloud bread to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
