- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup milk
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 (3-ounce) package of strawberry gelatin
- 1 cup boiling water
- 1 cup cold water
- 1 cup whipped topping (like Cool Whip)
- 1 cup sliced strawberries
- 1 cup mini marshmallows
- 1 cup pastel-colored M&M’s or chocolate eggs
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Add the softened butter, milk, eggs, and vanilla extract. Beat on medium speed for 2 minutes until well combined.
- Pour the batter into the prepared baking dish and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the gelatin. In a medium bowl, dissolve the strawberry gelatin in boiling water, stirring until completely dissolved. Add the cold water and mix well.
- Once the cake is done, remove it from the oven and let it cool for about 10 minutes. Use the end of a wooden spoon or a fork to poke holes all over the top of the cake.
- Pour the prepared gelatin mixture evenly over the cake, ensuring it seeps into the holes. Allow the cake to cool completely, then refrigerate for at least 2 hours to set.
- Once chilled, spread the whipped topping over the cake. Decorate with sliced strawberries, mini marshmallows, and pastel M&M’s or chocolate eggs.
- Slice and serve chilled. Enjoy your festive Easter treat!
Notes
- For a chocolate twist, use chocolate cake mix instead of vanilla and chocolate pudding instead of strawberry gelatin.
- Add shredded coconut on top of the whipped topping for a fun ‘nest’ effect, perfect for Easter.
