Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 (3-ounce) package of strawberry gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup whipped topping (like Cool Whip)
  • 1 cup sliced strawberries
  • 1 cup mini marshmallows
  • 1 cup pastel-colored M&M’s or chocolate eggs

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Add the softened butter, milk, eggs, and vanilla extract. Beat on medium speed for 2 minutes until well combined.
  3. Pour the batter into the prepared baking dish and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  4. While the cake is baking, prepare the gelatin. In a medium bowl, dissolve the strawberry gelatin in boiling water, stirring until completely dissolved. Add the cold water and mix well.
  5. Once the cake is done, remove it from the oven and let it cool for about 10 minutes. Use the end of a wooden spoon or a fork to poke holes all over the top of the cake.
  6. Pour the prepared gelatin mixture evenly over the cake, ensuring it seeps into the holes. Allow the cake to cool completely, then refrigerate for at least 2 hours to set.
  7. Once chilled, spread the whipped topping over the cake. Decorate with sliced strawberries, mini marshmallows, and pastel M&M’s or chocolate eggs.

Notes

  • For a chocolate twist, use chocolate cake mix instead of vanilla and chocolate pudding instead of strawberry gelatin.
