  • 9 lasagna noodles
  • 1 tablespoon olive oil
  • 1 pound shrimp, peeled and deveined
  • 1 cup lump crab meat
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 cups Alfredo sauce (store-bought or homemade)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add shrimp and cook for 2-3 minutes until pink and opaque. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the cooked shrimp, lump crab meat, ricotta cheese, 1/2 cup Parmesan cheese, 1 cup mozzarella cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.
  5. Spread a thin layer of Alfredo sauce on the bottom of a 9×13-inch baking dish.
  6. Take one lasagna noodle and spoon about 1/4 cup of the seafood filling onto it. Roll it up tightly and place it seam-side down in the baking dish. Repeat with the remaining noodles and filling.
  7. Pour the remaining Alfredo sauce over the roll-ups and sprinkle with the remaining mozzarella and Parmesan cheese.
  8. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Let cool for 5 minutes before serving. Garnish with chopped parsley.
