- 2 large russet potatoes, peeled and grated
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup vegetable oil
- 4 slices of bacon, chopped
- 1/4 cup all-purpose flour
- 2 cups milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 4 large eggs
- Chopped green onions for garnish (optional)
Instructions
- Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture. Transfer to a bowl and mix with salt and pepper.
- Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the grated potatoes in an even layer. Cook for about 5-7 minutes until the bottom is golden brown and crispy. Flip and cook for another 5-7 minutes until the other side is also crispy. Remove from skillet and keep warm.
- In the same skillet, add the chopped bacon and cook until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
- Sprinkle the flour into the bacon drippings and whisk for about 1 minute to create a roux. Gradually whisk in the milk, garlic powder, and onion powder. Cook until the gravy thickens, about 3-5 minutes. Stir in the cooked bacon and season with salt and pepper to taste.
- In a separate pan, fry the eggs sunny-side up or to your desired doneness.
- To serve, place a portion of crispy hash browns on a plate, top with a fried egg, and drizzle with bacon gravy. Garnish with chopped green onions if desired.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the gravy or top the dish with hot sauce.
- Substitute the bacon with cooked sausage or turkey bacon for a different flavor profile.
