Description

Crispy Hash Browns topped with a sunny-side up egg and rich bacon gravy, perfect for a hearty breakfast.


Ingredients

  • 2 large russet potatoes, peeled and grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup vegetable oil
  • 4 slices of bacon, chopped
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 4 large eggs
  • Chopped green onions for garnish (optional)

Instructions

  1. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture. Transfer to a bowl and mix with salt and pepper.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the grated potatoes in an even layer. Cook for about 5-7 minutes until the bottom is golden brown and crispy. Flip and cook for another 5-7 minutes until the other side is also crispy. Remove from skillet and keep warm.
  3. In the same skillet, add the chopped bacon and cook until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
  4. Sprinkle the flour into the bacon drippings and whisk for about 1 minute to create a roux. Gradually whisk in the milk, garlic powder, and onion powder. Cook until the gravy thickens, about 3-5 minutes. Stir in the cooked bacon and season with salt and pepper to taste.
  5. In a separate pan, fry the eggs sunny-side up or to your desired doneness.
  6. To serve, place a portion of crispy hash browns on a plate, top with a fried egg, and drizzle with bacon gravy. Garnish with chopped green onions if desired.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the gravy or top the dish with hot sauce.
