Description

Creamy Tuscan Sausage Pasta is a delicious and hearty dish perfect for weeknight dinners, featuring Italian sausage, fresh spinach, and a creamy sauce.

Ingredients

Scale
  • 8 ounces penne pasta
  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy)
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned and cooked through, breaking it apart with a spoon, about 5-7 minutes.
  3. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Stir in the cherry tomatoes and cook for another 3-4 minutes until they start to soften.
  5. Add the fresh spinach and cook until wilted, about 2 minutes.
  6. Pour in the heavy cream and stir to combine. Bring to a gentle simmer.
  7. Add the cooked penne pasta, Parmesan cheese, Italian seasoning, salt, and pepper. Stir until everything is well coated and heated through.
  8. Serve immediately, garnished with fresh basil if desired.

Notes

  • For a lighter version, substitute half-and-half for heavy cream and use turkey sausage instead of pork.
  • Add additional vegetables like bell peppers or zucchini for extra flavor and nutrition.
