  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 cup caramel sauce (store-bought or homemade)
  • Sea salt, for sprinkling (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a medium saucepan, melt the butter over low heat. Remove from heat and stir in the sugar, eggs, and vanilla until well combined.
  3. In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the butter mixture, stirring until just combined.
  4. Pour the brownie batter into the prepared springform pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let it cool completely.
  5. In a large mixing bowl, beat the softened cream cheese until smooth. Add the sugar and vanilla, mixing until well combined. Add the eggs one at a time, mixing on low speed until just blended. Finally, stir in the sour cream until smooth.
  6. Pour the cheesecake batter over the cooled brownie layer in the springform pan. Bake for 50-60 minutes, or until the edges are set but the center is still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
  7. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.
  8. Before serving, drizzle the caramel sauce over the top of the cheesecake and sprinkle with sea salt if desired.
