Description

A delicious and cheesy beef burrito filled with ground beef, rice, and a blend of cheeses, baked to perfection.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon taco seasoning mix
  • 1 cup cooked jasmine rice
  • 1 cup grated sharp cheddar cheese
  • 1 cup creamy nacho cheese dip
  • 4 large flour tortillas
  • 1/2 cup Greek yogurt
  • 1/4 cup chopped fresh tomatoes (optional)
  • 1/4 cup sliced green onions (optional)

Instructions

  1. Heat a large skillet over medium-high heat and add the ground beef, cooking until browned and crumbled.
  2. Drain excess grease and sprinkle taco seasoning over the beef, stirring well and simmering for 5 minutes.
  3. In a separate bowl, combine cooked jasmine rice, grated cheddar cheese, and half of the nacho cheese dip.
  4. Lay each tortilla flat and spoon a portion of the beef mixture followed by the rice and cheese blend into the center.
  5. Optionally, sprinkle chopped tomatoes and green onions on top.
  6. Fold the sides of the tortilla inward and roll tightly from the bottom to the top.
  7. Place the burritos seam-side down in a greased baking dish and drizzle with remaining nacho cheese dip.
  8. Preheat the oven to 350°F and bake for approximately 15 minutes until heated through and cheese is bubbling.
