A delicious and cheesy beef burrito filled with ground beef, rice, and a blend of cheeses, baked to perfection.

- 1 pound ground beef
- 1 tablespoon taco seasoning mix
- 1 cup cooked jasmine rice
- 1 cup grated sharp cheddar cheese
- 1 cup creamy nacho cheese dip
- 4 large flour tortillas
- 1/2 cup Greek yogurt
- 1/4 cup chopped fresh tomatoes (optional)
- 1/4 cup sliced green onions (optional)
Instructions
- Heat a large skillet over medium-high heat and add the ground beef, cooking until browned and crumbled.
- Drain excess grease and sprinkle taco seasoning over the beef, stirring well and simmering for 5 minutes.
- In a separate bowl, combine cooked jasmine rice, grated cheddar cheese, and half of the nacho cheese dip.
- Lay each tortilla flat and spoon a portion of the beef mixture followed by the rice and cheese blend into the center.
- Optionally, sprinkle chopped tomatoes and green onions on top.
- Fold the sides of the tortilla inward and roll tightly from the bottom to the top.
- Place the burritos seam-side down in a greased baking dish and drizzle with remaining nacho cheese dip.
- Preheat the oven to 350°F and bake for approximately 15 minutes until heated through and cheese is bubbling.
Notes
- For an extra kick, add diced jalapeños or hot sauce to the filling.
- Substitute ground beef with ground turkey, chicken, or black beans for a lighter or vegetarian option.
