- 1 ½ cups Biscoff cookie crumbs
- ½ cup unsalted butter, melted
- 2 (8-ounce) packages cream cheese, softened
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups diced apples (about 2 medium apples)
- 1 teaspoon cinnamon
- ½ cup brown sugar
- 1 cup rolled oats
- ½ cup all-purpose flour
- ¼ cup chopped pecans (optional)
Instructions
- Preheat the oven to 350°F.
- In a medium bowl, combine the Biscoff cookie crumbs and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Add the granulated sugar and vanilla extract, mixing until well combined.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, toss the diced apples with cinnamon and set aside. Fold the apples into the cream cheese mixture until evenly distributed.
- Pour the mixture over the cooled crust in the springform pan.
- In a separate bowl, combine the rolled oats, brown sugar, flour, and chopped pecans (if using). Drizzle in the melted butter and mix until crumbly.
- Sprinkle the oat mixture evenly over the cheesecake filling.
- Bake for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional 30 minutes.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.
Notes
- For a caramel twist, drizzle caramel sauce over the cheesecake before serving.
- For a spiced version, add a pinch of nutmeg to the apple mixture.
