Description

A delicious twist on traditional lasagna featuring shredded chicken, spinach, and a creamy white sauce.


Ingredients

  • 3 cups cooked, shredded chicken
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 4 cups spinach (fresh or frozen, thawed and drained)
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 3 cups white sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the white sauce: In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until lightly golden. Gradually whisk in the milk, stirring constantly until the sauce thickens. Add garlic powder, onion powder, salt, and pepper. Remove from heat.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add spinach, salt, pepper, and nutmeg, and cook until spinach is wilted (if using fresh) or heated through (if using frozen).
  4. In a 9×13 inch baking dish, spread a thin layer of white sauce on the bottom. Layer 3 lasagna noodles over the sauce.
  5. Spread half of the ricotta cheese over the noodles, followed by half of the shredded chicken, half of the spinach mixture, and a third of the white sauce. Sprinkle with 1/3 of the mozzarella cheese.
  6. Repeat the layering process: noodles, ricotta, chicken, spinach, white sauce, and mozzarella. Finish with a final layer of noodles, the remaining white sauce, and top with the remaining mozzarella and Parmesan cheese.
  7. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
  8. Let the lasagna cool for 10-15 minutes before slicing and serving.

Notes

  • For added flavor, mix in some chopped sun-dried tomatoes or roasted red peppers into the layers.
  • Substitute the chicken with cooked ground turkey or sausage for a different protein option.
