A delicious twist on traditional lasagna featuring shredded chicken, spinach, and a creamy white sauce.

- 3 cups cooked, shredded chicken
- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 4 cups spinach (fresh or frozen, thawed and drained)
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 3 cups white sauce
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the white sauce: In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until lightly golden. Gradually whisk in the milk, stirring constantly until the sauce thickens. Add garlic powder, onion powder, salt, and pepper. Remove from heat.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add spinach, salt, pepper, and nutmeg, and cook until spinach is wilted (if using fresh) or heated through (if using frozen).
- In a 9×13 inch baking dish, spread a thin layer of white sauce on the bottom. Layer 3 lasagna noodles over the sauce.
- Spread half of the ricotta cheese over the noodles, followed by half of the shredded chicken, half of the spinach mixture, and a third of the white sauce. Sprinkle with 1/3 of the mozzarella cheese.
- Repeat the layering process: noodles, ricotta, chicken, spinach, white sauce, and mozzarella. Finish with a final layer of noodles, the remaining white sauce, and top with the remaining mozzarella and Parmesan cheese.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
- Let the lasagna cool for 10-15 minutes before slicing and serving.
Notes
- For added flavor, mix in some chopped sun-dried tomatoes or roasted red peppers into the layers.
- Substitute the chicken with cooked ground turkey or sausage for a different protein option.
