Description

A delicious and creamy White Chocolate Strawberry Cheesecake topped with fresh strawberries and a dusting of powdered sugar.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese, softened
  • 1 cup white chocolate chips, melted
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 ½ cups fresh strawberries, hulled and sliced
  • 2 tablespoons powdered sugar (for topping)

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add ¾ cup granulated sugar and continue to beat until creamy.
  4. Stir in the melted white chocolate and vanilla extract until fully incorporated.
  5. Add the eggs one at a time, mixing on low speed until just combined after each addition. Do not overmix.
  6. Gently fold in the sour cream until smooth. Pour the cheesecake batter over the crust in the springform pan.
  7. Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
  8. Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, or overnight for best results.
  9. Before serving, top the cheesecake with sliced strawberries and dust with powdered sugar.

Notes

  • For a chocolate twist, use dark chocolate instead of white chocolate in the cheesecake batter.
  • Add a layer of strawberry sauce on top of the cheesecake for extra flavor; simply blend fresh strawberries with a bit of sugar and cook until thickened.
