Description
A delicious and creamy White Chocolate Strawberry Cheesecake topped with fresh strawberries and a dusting of powdered sugar.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 16 ounces cream cheese, softened
- 1 cup white chocolate chips, melted
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 ½ cups fresh strawberries, hulled and sliced
- 2 tablespoons powdered sugar (for topping)
Instructions
- Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add ¾ cup granulated sugar and continue to beat until creamy.
- Stir in the melted white chocolate and vanilla extract until fully incorporated.
- Add the eggs one at a time, mixing on low speed until just combined after each addition. Do not overmix.
- Gently fold in the sour cream until smooth. Pour the cheesecake batter over the crust in the springform pan.
- Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
- Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, or overnight for best results.
- Before serving, top the cheesecake with sliced strawberries and dust with powdered sugar.
Notes
- For a chocolate twist, use dark chocolate instead of white chocolate in the cheesecake batter.
- Add a layer of strawberry sauce on top of the cheesecake for extra flavor; simply blend fresh strawberries with a bit of sugar and cook until thickened.
