Description

A rich and creamy cheesecake infused with white chocolate, almond, and amaretto liqueur, topped with whipped cream and toasted almonds.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 3 large eggs
  • 8 ounces white chocolate, chopped
  • ¼ cup amaretto liqueur
  • 1 cup heavy cream
  • ¼ cup sliced almonds, toasted (for garnish)

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.
  4. Add the vanilla extract, almond extract, and amaretto liqueur to the cream cheese mixture. Mix until well incorporated.
  5. Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
  6. Melt the chopped white chocolate in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Allow to cool slightly, then fold it into the cream cheese mixture.
  7. Pour the cheesecake batter over the prepared crust in the springform pan. Smooth the top with a spatula.
  8. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
  9. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
  10. Before serving, whip the heavy cream until soft peaks form and spread it over the top of the cheesecake. Garnish with toasted sliced almonds.

Notes

  • For a chocolate twist, substitute half of the white chocolate with semi-sweet chocolate.
  • To enhance the almond flavor, add a tablespoon of finely chopped marzipan to the batter before baking.
