- 1/4 cup milk
- 1 cup bell peppers, diced (any color)

- 1 cup mushrooms, sliced

- 1 tablespoon olive oil
- 1/2 cup shredded cheese (cheddar or your choice)

Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper until well combined. Set aside.
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onions and bell peppers, and sauté for about 5 minutes, or until they begin to soften.
- Add the sliced mushrooms to the skillet and continue to cook for another 3-4 minutes, until the mushrooms are tender.
- Stir in the chopped spinach and cook for an additional 1-2 minutes, until wilted.
- Pour the egg mixture over the sautéed vegetables in the skillet, ensuring even distribution.
- Sprinkle the shredded cheese on top of the egg mixture.
- Cook on the stovetop for 2-3 minutes, just until the edges begin to set.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is puffed and the center is set.
- Remove from the oven and let it cool for a few minutes before slicing. Garnish with fresh parsley if desired.
