Description

A delightful Vanilla Custard Puff Pastry Cake made with layers of flaky puff pastry and creamy vanilla custard.

Ingredients

Scale
  • 2 sheets of thawed puff pastry
  • 1 cup whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 egg, beaten (for egg wash)
  • Powdered sugar, for finishing

Instructions

  1. Preheat your oven to 400°F.
  2. On a floured surface, gently roll out each sheet of puff pastry to eliminate any creases.
  3. Cut the pastry into rectangles, roughly 9×12 inches in size, and arrange them on a parchment-lined baking sheet.
  4. Brush the top of each rectangle with the beaten egg for a golden finish.
  5. Bake the pastry for 15-20 minutes, or until they rise beautifully and turn a lovely golden hue.
  6. Once baked, take them out and allow them to cool completely.
  7. In a medium saucepan, mix the whole milk, heavy cream, and half of the granulated sugar. Heat this mixture over medium heat until it reaches a gentle simmer.
  8. In a separate bowl, whisk together the remaining sugar, cornstarch, egg yolks, vanilla extract, and salt until the mixture is smooth and creamy.
  9. When the milk mixture is simmering, gradually whisk it into the egg mixture to temper the eggs.
  10. Pour everything back into the saucepan and cook over medium heat, stirring continuously until the custard thickens and bubbles, about 5-7 minutes.
  11. Remove from heat and let it cool for a few minutes.
  12. To build your dessert, place one layer of puff pastry on a serving plate. Spread half of the creamy vanilla custard over this layer.
  13. Add the second layer of puff pastry and top it with the remaining custard.
  14. Finish with the last layer of puff pastry on top.
  15. Refrigerate the assembled cake for at least an hour to allow it to set properly.
  16. Just before serving, dust the top with powdered sugar for an elegant touch.
  17. Cut into squares or rectangles and savor the delightful flavors!

Notes

  • Ensure the puff pastry is fully thawed before use.
  • For best results, refrigerate the cake for longer to allow the custard to set properly.
  • Feel free to add fresh fruits or berries for added flavor and decoration.
