A delightful Vanilla Custard Puff Pastry Cake made with layers of flaky puff pastry and creamy vanilla custard.

- 2 sheets of thawed puff pastry
- 1 cup whole milk
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 egg, beaten (for egg wash)
- Powdered sugar, for finishing
Instructions
- Preheat your oven to 400°F.
- On a floured surface, gently roll out each sheet of puff pastry to eliminate any creases.
- Cut the pastry into rectangles, roughly 9×12 inches in size, and arrange them on a parchment-lined baking sheet.
- Brush the top of each rectangle with the beaten egg for a golden finish.
- Bake the pastry for 15-20 minutes, or until they rise beautifully and turn a lovely golden hue.
- Once baked, take them out and allow them to cool completely.
- In a medium saucepan, mix the whole milk, heavy cream, and half of the granulated sugar. Heat this mixture over medium heat until it reaches a gentle simmer.
- In a separate bowl, whisk together the remaining sugar, cornstarch, egg yolks, vanilla extract, and salt until the mixture is smooth and creamy.
- When the milk mixture is simmering, gradually whisk it into the egg mixture to temper the eggs.
- Pour everything back into the saucepan and cook over medium heat, stirring continuously until the custard thickens and bubbles, about 5-7 minutes.
- Remove from heat and let it cool for a few minutes.
- To build your dessert, place one layer of puff pastry on a serving plate. Spread half of the creamy vanilla custard over this layer.
- Add the second layer of puff pastry and top it with the remaining custard.
- Finish with the last layer of puff pastry on top.
- Refrigerate the assembled cake for at least an hour to allow it to set properly.
- Just before serving, dust the top with powdered sugar for an elegant touch.
- Cut into squares or rectangles and savor the delightful flavors!
