Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon vanilla extract
  • 1 cup whole milk
  • 3 large egg yolks
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F. Grease an 8-inch square baking dish.
  2. In a mixing bowl, combine the flour and powdered sugar. Cut in the softened butter until the mixture resembles coarse crumbs. Stir in 1/2 teaspoon of vanilla extract. Press the mixture evenly into the bottom of the prepared baking dish.
  3. Bake for 15 minutes or until lightly golden. Remove from the oven and let cool.
  4. In a medium saucepan over medium heat, combine the milk and 1 teaspoon of vanilla extract.
  5. In a separate bowl, whisk together the egg yolks, granulated sugar, cornstarch, and salt until smooth.
  6. Gradually add the warm milk mixture to the egg yolk mixture, whisking constantly to prevent curdling.
  7. Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens and begins to bubble. Remove from heat and let cool slightly.
  8. Pour the custard over the cooled crust in the baking dish, spreading it evenly. Refrigerate for at least 2 hours until set.
  9. In a mixing bowl, whip the heavy cream until soft peaks form. Spread the whipped cream over the chilled custard layer.
  10. Cut into squares and serve.

Notes

  • For a chocolate twist, add 2 tablespoons of cocoa powder to the custard mixture.
  • For a fruit topping, consider adding fresh berries or a fruit compote on top of the whipped cream before serving.
