- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1/2 teaspoon vanilla extract
- 1 cup whole milk
- 3 large egg yolks
- 1/3 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 350°F. Grease an 8-inch square baking dish.
- In a mixing bowl, combine the flour and powdered sugar. Cut in the softened butter until the mixture resembles coarse crumbs. Stir in 1/2 teaspoon of vanilla extract. Press the mixture evenly into the bottom of the prepared baking dish.
- Bake for 15 minutes or until lightly golden. Remove from the oven and let cool.
- In a medium saucepan over medium heat, combine the milk and 1 teaspoon of vanilla extract.
- In a separate bowl, whisk together the egg yolks, granulated sugar, cornstarch, and salt until smooth.
- Gradually add the warm milk mixture to the egg yolk mixture, whisking constantly to prevent curdling.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens and begins to bubble. Remove from heat and let cool slightly.
- Pour the custard over the cooled crust in the baking dish, spreading it evenly. Refrigerate for at least 2 hours until set.
- In a mixing bowl, whip the heavy cream until soft peaks form. Spread the whipped cream over the chilled custard layer.
- Cut into squares and serve.
Notes
- For a chocolate twist, add 2 tablespoons of cocoa powder to the custard mixture.
- For a fruit topping, consider adding fresh berries or a fruit compote on top of the whipped cream before serving.
