Description

A creamy and delicious lasagna made with pumpkin and spinach, perfect for a comforting meal.


Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 can (15 ounces) pure pumpkin puree
  • 2 cups fresh spinach, chopped
  • 1 large egg
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  2. In a large mixing bowl, combine the ricotta cheese, pumpkin puree, chopped spinach, egg, garlic powder, onion powder, oregano, salt, black pepper, and nutmeg. Mix until well combined.
  3. Spread 1 cup of marinara sauce evenly on the bottom of a 9×13-inch baking dish.
  4. Place 4 lasagna noodles over the sauce. Spread half of the pumpkin and spinach mixture over the noodles, then sprinkle with 1/3 of the mozzarella cheese.
  5. Repeat the layers: add 4 more noodles, the remaining pumpkin and spinach mixture, and another 1/3 of the mozzarella cheese.
  6. Top with the final 4 noodles, the remaining marinara sauce, and the rest of the mozzarella cheese. Sprinkle the grated Parmesan cheese on top.
  7. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  8. Let the lasagna cool for 10 minutes before slicing and serving.

Notes

  • For a spicier kick, add red pepper flakes to the pumpkin mixture.
  • You can substitute the spinach with kale or Swiss chard for a different flavor and texture.
