A creamy and delicious lasagna made with pumpkin and spinach, perfect for a comforting meal.

- 12 lasagna noodles
- 2 cups ricotta cheese
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1 can (15 ounces) pure pumpkin puree
- 2 cups fresh spinach, chopped
- 1 large egg
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 2 cups marinara sauce
Instructions
- Preheat the oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a large mixing bowl, combine the ricotta cheese, pumpkin puree, chopped spinach, egg, garlic powder, onion powder, oregano, salt, black pepper, and nutmeg. Mix until well combined.
- Spread 1 cup of marinara sauce evenly on the bottom of a 9×13-inch baking dish.
- Place 4 lasagna noodles over the sauce. Spread half of the pumpkin and spinach mixture over the noodles, then sprinkle with 1/3 of the mozzarella cheese.
- Repeat the layers: add 4 more noodles, the remaining pumpkin and spinach mixture, and another 1/3 of the mozzarella cheese.
- Top with the final 4 noodles, the remaining marinara sauce, and the rest of the mozzarella cheese. Sprinkle the grated Parmesan cheese on top.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Let the lasagna cool for 10 minutes before slicing and serving.
Notes
- For a spicier kick, add red pepper flakes to the pumpkin mixture.
- You can substitute the spinach with kale or Swiss chard for a different flavor and texture.
