Ingredients

  • 2 (6-ounce) salmon fillets
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 400°F.
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Season the salmon fillets with salt, pepper, Italian seasoning, and red pepper flakes.
  3. Place the salmon skin-side down in the skillet and sear for about 3-4 minutes until golden brown.
  4. Carefully flip the salmon fillets and add the cherry tomatoes around them. Cook for an additional 2 minutes.
  5. In a small bowl, whisk together the heavy cream, Parmesan cheese, basil, and lemon juice. Pour the mixture over the salmon and tomatoes in the skillet.
  6. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Remove from the oven and let it rest for a couple of minutes before serving.
