- 2 (6-ounce) salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- 1 cup cherry tomatoes, halved
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh basil, chopped
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 400°F.
- In a large oven-safe skillet, heat the olive oil over medium heat. Season the salmon fillets with salt, pepper, Italian seasoning, and red pepper flakes.
- Place the salmon skin-side down in the skillet and sear for about 3-4 minutes until golden brown.
- Carefully flip the salmon fillets and add the cherry tomatoes around them. Cook for an additional 2 minutes.
- In a small bowl, whisk together the heavy cream, Parmesan cheese, basil, and lemon juice. Pour the mixture over the salmon and tomatoes in the skillet.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven and let it rest for a couple of minutes before serving.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- You can also add spinach to the skillet for extra nutrition and flavor.
- For a twist, try adding capers or olives to the sauce for a briny kick.
