Tuscan Marry Me Salmon is a delightful dish that combines the rich flavors of salmon with a creamy sauce, cherry tomatoes, and spinach, making it a perfect centerpiece for any dinner table.


Ingredients

  • 2 (6-ounce) salmon fillets
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the olive oil, garlic powder, Italian seasoning, salt, and pepper. Rub this mixture over both sides of the salmon fillets.
  3. In a large oven-safe skillet, heat over medium heat. Add the seasoned salmon fillets and sear for about 3-4 minutes on each side until golden brown. Remove the salmon from the skillet and set aside.
  4. In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they start to soften. Add the baby spinach and cook until wilted.
  5. Pour in the heavy cream and stir in the Parmesan cheese and lemon juice. Cook for an additional 2 minutes until the sauce thickens slightly.
  6. Return the salmon fillets to the skillet, spooning some of the sauce over the top.
  7. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Remove from the oven and garnish with fresh basil leaves before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the sauce.
