Description

Ingredients

  • 4 salmon fillets (6 ounces each)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 5 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Juice of 1 lemon
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season the salmon fillets with salt and pepper.
  2. Place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes until the skin is crispy, then carefully flip and cook for another 3-4 minutes until cooked through. Remove the salmon from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the cherry tomatoes and Italian seasoning to the skillet. Cook for 2-3 minutes until the tomatoes start to soften.
  5. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  6. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese and lemon juice, mixing until the sauce is smooth.
  7. Return the salmon to the skillet, spooning the sauce over the fillets. Cook for an additional 1-2 minutes to heat through.
  8. Serve immediately, garnished with fresh basil leaves if desired.

  • For a lighter version, substitute heavy cream with coconut milk or half-and-half.
  • Add a pinch of red pepper flakes for a spicy kick or include sliced mushrooms for extra flavor and texture.
