- 4 salmon fillets (6 ounces each)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 5 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Juice of 1 lemon
- Fresh basil leaves for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Season the salmon fillets with salt and pepper.
- Place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes until the skin is crispy, then carefully flip and cook for another 3-4 minutes until cooked through. Remove the salmon from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Add the cherry tomatoes and Italian seasoning to the skillet. Cook for 2-3 minutes until the tomatoes start to soften.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese and lemon juice, mixing until the sauce is smooth.
- Return the salmon to the skillet, spooning the sauce over the fillets. Cook for an additional 1-2 minutes to heat through.
- Serve immediately, garnished with fresh basil leaves if desired.
Notes
- For a lighter version, substitute heavy cream with coconut milk or half-and-half.
- Add a pinch of red pepper flakes for a spicy kick or include sliced mushrooms for extra flavor and texture.
