- 1 can (14 ounces) artichoke hearts, drained and quartered

- 1/4 cup fresh basil leaves, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- In a large bowl, combine the cherry tomatoes, artichoke hearts, red onion, and fresh basil.
- In a separate small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and pepper until well combined.
- Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.
- If desired, sprinkle the grated Parmesan cheese on top before serving.
- Allow the salad to sit for about 15 minutes at room temperature to let the flavors meld together.
