A cozy and delicious Turkey Sweet Potato Bake that combines tender turkey, sweet potatoes, and vegetables, topped with melted cheddar cheese.

- 2 cups cooked turkey, shredded
- 2 cups sweet potatoes, peeled and diced
- 1 cup green beans, trimmed and chopped
- 1 cup corn, frozen or canned
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs (optional)
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the cooked turkey, sweet potatoes, green beans, corn, and chicken broth.
- Add garlic powder, onion powder, dried thyme, paprika, salt, and pepper to the mixture. Stir until well combined.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Sprinkle the shredded cheddar cheese evenly over the top. If using breadcrumbs, mix them with olive oil and sprinkle over the cheese for added crunch.
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- For a spicier kick, add 1/2 teaspoon of cayenne pepper or red pepper flakes to the mixture.
- Substitute the turkey with cooked chicken or ground turkey for a different flavor profile.
