Ingredients

- 2 cups diced fresh pineapple
- 1 cup sliced strawberries, hulled
- 1 cup peeled and sliced kiwi
- 1 cup diced mango
- 1 cup blueberries
- 1 banana, sliced
- 1 tablespoon honey
- 1 tablespoon freshly squeezed lime juice
- 1 tablespoon chopped fresh mint (optional)
Instructions
- Prepare a large mixing bowl and add the diced pineapple, hulled strawberries, sliced kiwi, diced mango, blueberries, and banana.
- In a separate small bowl, combine the honey and lime juice, mixing them together until smooth.
- Pour the honey-lime mixture over the fruit medley and gently fold the ingredients together.
- If using, sprinkle chopped mint over the salad and give it a light toss.
- Chill the fruit medley in the refrigerator for at least 30 minutes before serving.
Notes
- For an extra crunch, add 1/4 cup of chopped nuts, such as almonds or walnuts.
- Feel free to swap out any fruits with seasonal favorites like peaches or cherries for a unique twist.
