- 1 ½ cups crushed digestive biscuits
- ½ cup melted coconut oil
- 2 tablespoons brown sugar
- 16 ounces softened cream cheese
- 1 cup granulated sugar
- 1 teaspoon coconut extract
- 3 large eggs
- 1 cup ripe mango puree (fresh or canned)
- 1 tablespoon lime juice
- 1 cup coconut whipped topping (for garnish)
- Slices of fresh mango and lime zest (for decoration)
Instructions
- Preheat your oven to 325°F.
- In a mixing bowl, combine the crushed digestive biscuits, melted coconut oil, and brown sugar. Stir until the mixture resembles wet sand.
- Firmly press this mixture into the bottom of a 9-inch springform pan to create a sturdy crust. Bake for 10 minutes, then take it out and allow it to cool completely.
- In a large bowl, use an electric mixer to blend the softened cream cheese with granulated sugar and coconut extract until fluffy and smooth.
- Add the eggs one at a time, ensuring each is fully incorporated before adding the next.
- Gently fold in the mango puree and lime juice until well mixed.
- Pour the creamy filling over the cooled crust in the springform pan.
- Bake for 50-60 minutes, or until the cheesecake is set around the edges but still has a slight wobble in the center.
- Once done, turn off the oven, slightly open the door, and let the cheesecake cool inside for about an hour.
- Refrigerate for a minimum of 4 hours or preferably overnight to achieve the best texture.
- After chilling, carefully release the sides of the springform pan.
- Decorate the top with coconut whipped topping and arrange fresh mango slices along with a sprinkle of lime zest before serving.
Notes
- For best results, use ripe mangoes for the puree.
- Chilling overnight enhances the flavor and texture of the cheesecake.
- Feel free to adjust the sweetness by adding more or less sugar based on your preference.
