Description

A delightful and easy-to-make Tropical Mango Cheesecake that combines the flavors of mango and coconut for a refreshing dessert.

Ingredients

Scale
  • 1 ½ cups crushed digestive biscuits
  • ½ cup melted coconut oil
  • 2 tablespoons brown sugar
  • 16 ounces softened cream cheese
  • 1 cup granulated sugar
  • 1 teaspoon coconut extract
  • 3 large eggs
  • 1 cup ripe mango puree (fresh or canned)
  • 1 tablespoon lime juice
  • 1 cup coconut whipped topping (for garnish)
  • Slices of fresh mango and lime zest (for decoration)

Instructions

  1. Preheat your oven to 325°F.
  2. In a mixing bowl, combine the crushed digestive biscuits, melted coconut oil, and brown sugar. Stir until the mixture resembles wet sand.
  3. Firmly press this mixture into the bottom of a 9-inch springform pan to create a sturdy crust. Bake for 10 minutes, then take it out and allow it to cool completely.
  4. In a large bowl, use an electric mixer to blend the softened cream cheese with granulated sugar and coconut extract until fluffy and smooth.
  5. Add the eggs one at a time, ensuring each is fully incorporated before adding the next.
  6. Gently fold in the mango puree and lime juice until well mixed.
  7. Pour the creamy filling over the cooled crust in the springform pan.
  8. Bake for 50-60 minutes, or until the cheesecake is set around the edges but still has a slight wobble in the center.
  9. Once done, turn off the oven, slightly open the door, and let the cheesecake cool inside for about an hour.
  10. Refrigerate for a minimum of 4 hours or preferably overnight to achieve the best texture.
  11. After chilling, carefully release the sides of the springform pan.
  12. Decorate the top with coconut whipped topping and arrange fresh mango slices along with a sprinkle of lime zest before serving.

Notes

  • For best results, use ripe mangoes for the puree.
  • Chilling overnight enhances the flavor and texture of the cheesecake.
  • Feel free to adjust the sweetness by adding more or less sugar based on your preference.
