Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 ounces bacon, diced
  • 4 cups chicken broth
  • 1 pound fresh green beans, trimmed and cut into 1-inch pieces
  • 2 medium potatoes, peeled and diced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and diced bacon. Cook until the bacon is crispy, about 5-7 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the green beans and diced potatoes to the pot. Stir in the dried thyme and smoked paprika.
