- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 ounces bacon, diced
- 4 cups chicken broth
- 1 pound fresh green beans, trimmed and cut into 1-inch pieces
- 2 medium potatoes, peeled and diced
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and diced bacon. Cook until the bacon is crispy, about 5-7 minutes.
- Pour in the chicken broth and bring to a boil.
- Add the green beans and diced potatoes to the pot. Stir in the dried thyme and smoked paprika.
- Reduce the heat to a simmer and cook for 20-25 minutes, or until the potatoes and green beans are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.

- For a heartier soup, add shredded rotisserie chicken or sausage.
