  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Start by boiling a large pot of salted water. Once boiling, add the tortellini and cook according to the package directions until they reach an al dente texture. Drain the tortellini and set aside.
  2. In a spacious skillet, warm the olive oil over medium heat. Introduce the zucchini, yellow squash, and red bell pepper, cooking for about 5-7 minutes until they soften and become fragrant.
  3. Next, add the halved cherry tomatoes and minced garlic to the skillet. Sauté for an additional 2-3 minutes, stirring often, until the tomatoes start to release their juices.
  4. Combine the drained tortellini with the sautéed vegetables, then sprinkle in the dried basil, oregano, salt, and pepper. Gently toss everything together until well mixed and heated through.
  5. Take the skillet off the heat and generously sprinkle the grated Parmesan cheese over the mixture. Toss lightly to ensure the cheese melts and coats the tortellini and veggies.
  6. Serve immediately, adding fresh basil leaves on top for an extra burst of flavor if you like.
